Description: Teff (Eragrostis Tef) is an ancient grain grown in South Africa. It has a mild nutty flavour, with a molasses-like sweetness. Teff grains are so small that the bulk of the grain consists of bran and germ.

Directions: Boil 3 cups water. Add 1 cup teff grain, cover and simmer for 15 to 20 minutes or until water is absorbed. Stir occasionally near end of cooking, making sure not to let grain boil dry. Season and serve

Uses: The tiny teff grain mixes well with a variety of other, larger grains. It can also be used in stuffing, appetizer toppings, or as a garnish for green salads. Uncooked teff grain can be added to most baked goods or substituted for seeds, nuts or small grains. Teff is easier to chew if the grain is toasted or soaked before steaming.

Storage: Product should be stored in a cool, dry place. Recommended shelf life is 12 months.
