Sweet Rice Flour
Description: Also known as Glutinous Rice Flour, Mochiko, Mifen or Galapong, this flour is made by grinding polished Californian glutinous milled rice. The term “glutinous” refers to the stickiness of this high starch Asian rice variety. This is a bland flour, which allows it to be mixed with other products without affecting flavour and aroma. Sweet Rice Flour is gluten-free.
Uses: Often used as a thickening agent, sweet rice flour is becoming more common in gluten-free baking for tender pies and cakes. It has the ability to smooth the gritty taste (that is common in gluten-free baked goods) when combined with other flours.
Storage: Shelf life is expected to be 1 year if stored between 50°F - 55°F in a dry, insect, rodent, odor-free environment avoiding direct sunlight and high humidity.
